This place is wonderful. Since the brew is jun-style it creates higher alcohol, less acidity, and without the vinegar taste of kombucha while still containing millions of probiotics. With the use of honey, the flavors are all more complex and brighter than if made with just sugar. Andrew surely knows his way around, doing a great job of pouring for and educating guests. Having made kombutcha, wine, and beer before I was already familiar, but I enjoyed how confident and intelligent he was answering questions of another patron.
We shared 3 flights, which gave us 9 samples listed in the same order as the tasting room has them: OG, hibiscus, and lavender, which are their main brews; ginger, chai, winter RX, vanilla-smoke, sorrel, and polypore. All were great, but the polypore and sorrel were top of the list for both of us. My husband ended up getting a 12oz polypore while I finished the last flight we got.
For those unfamiliar with this brew technique, the result is a much lighter, gluten-free, effervescent beverage. Most have slightly more alcohol than most witbiers, but less carbonation and simply not as heavy in the gut.
Grab a few samples and leave with a growler and a half or four.

Ambiance is a real vibe, intimate and personal. Seating for 35-40 so no one gets forgotten or neglected.

This may be my favorite bar we've found in Santa Fe so far. Highly recommend!
It's out of the way in the industrial area (walking distance from Meow Wolf), but that doesn't seem to affect the vibe much. It's tiny and barely fits thirty people, but this bar packs a punch!
Each time we've been there's been unexpected live music and every time I leave having heard a new artist I'm now in love with. And every time I've met amazing people who are now friends, including the bartenders, who are always awesome.
The drinks are kind of expensive, but they're FANTASTIC. Well worth the price. They make their own drinks from honey, and they're unlike anything I've had elsewhere. Kind of like mead and kambucha combined. If that's not your jam they have world class cocktails on the menu. Their Paloma with Mescal is the best Paloma I've ever had.
All in all, a gem in the middle of nowhere that should be on your list if you're visiting Santa Fe.
A completely different and delicious experience. This small bar packs a punch. The on tap honey based brews were all fantastic. Our server had us try all of them to get a sense. You can order them straight from the tap or have a cocktail. We enjoyed some of them enough to buy a growler of our favs to go.
Really great spot with easy parking and a comfortable outside patio. Great location close to meow wolf and so many great food spots!
you should definitely try their lavender or chai kombucha. Some of their drinks are stronger than beer to be careful 😝 they also have WiFi so if you’re not going for the evening party you can also enjoy the afternoon business meeting.
Stopped in while visiting Santa Fe, and had an amazing experience! The Honeybrews were so unique and delicious, and the owner, Andrew, was a delight. We left with matching mother-daughter hats and great memories. Highly recommend!
I am from London on a Road trip. Passing through NM for 1 night only. Love Beers, IPAs, Ciders etc... Looked this place up on Google - 5* rating. And let me tell you: THOROUGHLY DESERVED. Thoroughly enjoyed my experience here. The guy that owns/manages it, Andrew - what a gem of a guy. The stuff on tap - delightful. All made from fermented honey. So slight sweet taste, but I LOVED IT. Recommend Chai, Ginger Pear and Lavender-Lemongrass. While I was there, there some C+W live acts performing. Great fun, vibe. RECOMMEND!!
I wish I could give them more than 5 Stars!! This place has an amazing vibe, excellent mead, and fun staff!!! The entire experience from start to finish was high light of my vacation to Santa Fe!!! It was so good I had to buy some growlers to take home with me.
